Seasoning Recipes - Flavored Vinegars
Thyme, Lemon Peel and Black Pepper Vinegar
1 large sprig fresh thyme
1 long spiral lemon peel
2 heaping tablespoons black peppercorns
2 cups white wine vinegar
Place herbs in a one-pint sterilized jar. Add vinegar and seal tightly.
Place in a light-filled window for one month, giving bottle a gentle shake
every so often.
To give, tie raffia around the bottle and label.
NOTE: You can also use wine bottles with new cork tops.
