Seasoning Recipes - Flavored Vinegars
Gourmet Vinegar
3 cups red wine vinegar
3 whole cloves
1 bay leaf, crumbled
1/4 cup chopped fresh marjoram
1/4 cup chopped fresh basil
1/4 cup chopped fresh dill
Freshly ground black pepper
1/4 teaspoon ground allspice
Pour all ingredients into a 1-quart non-metal container; cover tightly.
Let stand 4 to 6 weeks in a cool, dark place.
Strain into a bottle of your choice.
