Mandarin Orange Almond Balls recipe
2 cups almond cookie or vanilla wafer crumbs
2 cups confectioners' sugar
1/2 cup butter, at room temperature
1/2 cup mandarin oranges, drained and mashed (fresh if available)
2 teaspoons mandarin orange zest, finely chopped
1/2 cup slivered almonds
1 cup shredded coconut
Whip butter. Add cookie crumbs and confectioners' sugar; mix well.
Mix in oranges, zest and slivered almonds. Refrigerate until just chilled.
With a large melon scoop, make compact balls, roll in shredded coconut. Cover, then refrigerate.
Best when allowed to mellow a day or two.
