Peanut Butter Krispies recipe

Makes 135 small balls.

2 eggs
1 cup peanut butter
1 large carrot, grated
3/4 cup ground up Wheat Thins crackers
1 cup oats
1/2 cup natural bran
1/4 cup 7 grain cereal
2 cups Rice Krispies
2 cups milk
About 2 1/2 cups whole wheat flour

Mix all ingredients well (EXCEPT the flour) in a mixer with a dough hook. Gradually add flour, mixing well, until dough is stiff enough to handle and can be rolled into little balls without it sticking to your hands.

Have oven racks in middle and upper positions. Use nonstick pans, preferably one large cookie sheet and one small sheet.

Heat oven to 250 degrees F.

Roll dough into small balls and place on sheets Place in oven on separate racks.

After 45 minutes, remove pans from oven. Dump all balls onto large cookie sheet and toss them around. Place back in oven on top rack. Toss around about every 45 minutes for a total cooking time of about 3 hours.
