Red Velvet Cakes Baked in a Jar
2/3 cup mayonnaise
3 cup granulated sugar
3 eggs
1 tablespoon vanilla extract
2 cups applesauce, unsweetened
3 cups all-purpose flour
2/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1/8 teaspoon salt
2 teaspoon red food coloring
Prepare jars as for any other cake in a jar.
Beat together mayonnaise and half of sugar until fluffy. Add eggs, remaining sugar, vanilla extract, food coloring and applesauce.
Sift together dry ingredients and add to applesauce mixture a little at a time: beat well after each addition. Pour one cup of batter in each jar and carefully remove any batter from the rims. Place jars in a preheated 325 degree F oven and bake for 40 minutes.
While cakes are baking heat jar lids until ready to use. Remove cakes from oven one at a time clean rims add lid and bands. Jars will seal as they cool.
Makes 8 pint jars.
WARNING: Use only CANNING JARS for this recipe. Others may not be tempered to withstand the heat. Do NOT use coffee or vegetable cans as most contain lead and are painted or sealed with materials that may give off toxic gases when heated.
