Baklava Cookies
1 cup butter
1/3 cup or or more orange juice concentrate
1 teaspoon cinnamon
2 teaspoons baking powder
1/2 teaspoon baking soda
3 cups all-purpose flour
Syrup:
1 cup granulated sugar
1/2 cup water
1/2 cup honey
Rolling Mixture:
1 1/2 cups finely chopped walnuts or pecans
1 tablespoon granulated sugar
1 teaspoon cinnamon
Heat oven to 350 degrees F and lightly grease cookie sheet.
Use mixer and make a medium dough that will not stick to hands.
Add the 1/2 cup juice first then gradually add a tablespoon
more at a time if necessary. Pinch off a clump of big fist clump
of dough and roll out with your palms to form a big pencil shape
about 1/2 inch wide. Use knife and cut 1 1/2-inch pieces, cut
on an angle (you should have a 1 1/2-inch piece of dough with
points...an irregular triangle shape. Bake for 20 minutes or
until bottoms are lightly browned.
While cookies are baking, boil syrup ingredients for 5 minutes.
Let cookies cool slightly and dip into syrup (doesn't have to
be hot) and roll each one in rolling mixture. Place on wire
rack to cool.
These are melt in your mouth cookies, with a traditional baklava
taste.
