Almond Meltaways
Yields 12 dozen 1 3/4-inch cookies
4 ounces almond paste
3 cups confectioners' sugar
4 eggs
2 cups (4 sticks) butter, softened
5 3/4 cups cake flour
Heat oven to 375 degrees F. Line cookie sheets with parchment
paper.
In large bowl, combine almond paste and sugar; beat well. Add
the eggs one at a time, beating well after each addition. Add
butter; beat until light. Add flour; mix until smooth.
With No. 4 star tip, pipe onto paper lined cookie sheet in desired
shapes. Bake for 6 to 8 minutes or until edges are light brown
and centers are set. Do not over-bake.
