Stuffed Dates
3 pounds dates
1/2 cup butter
1/8 teaspoon salt
2 cups confectioners sugar
2 tablespoons brandy or rum
1 teaspoon grated orange rind
3/4 cup finely chopped nuts, toasted
Pit dates and split open without cutting clear through.
Cream butter, salt, sugar and brandy or rum until light and fluffy. Add orange
rind and nuts.
Fill dates and roll in granulated sugar. Allow to stnad for 4 to 5 hours before
packing in tightly covered containers. Allow to age for at least a week.
Makes 14 to 16 dozen dates.
