Fruited Sea Foam

Mixed fruits sparkle in snowy candy.

3 cups granulated sugar
2/3 cup water
1/2 cup light corn syrup
2 egg whites, stiffly beaten
1/8 teaspoon salt
1/2 teaspoon vanilla extract
1 cup candied mixed fruits

Combine sugar, water and syrup in a heavy saucepan. Boil until the mixture forms a hard ball when dropped in cold water, about 252 degrees F.

Combine egg whites and salt; beat until stiff. Pour hot syrup over egg whites, beating constantly until mixture loses gloss.

Add vanilla extract and beat until mixture forms peak. Fold in candied mixed fruit. Pour into greased 8-inch square pan. Scatter mixed fruit on top, cut into squares.

Makes about 24 pieces.
