Orange Date Nut Loaf
1 small seedless orange
1 package date or nut quick bread mix
1/2 cup dairy sour cream
1/4 cup coffee-flavored liqueur or coffee
1/4 cup milk
1 egg
Glaze:
1/2 cup confectioners' sugar
1 to 2 tablespoons orange juice
Heat oven to 350 degrees F. Grease and flour bottom only of
8 x 4-inch or 9 x 5-inch loaf pan.
In food processor with metal blade, process orange, including
peel, until finely ground. Measure 1/2 cup.
In large bowl, combine 1/2 cup ground orange and all remaining
bread ingredients. Stir 50 to 75 strokes until dry particles
are moistened. Pour batter into prepared pan. Bake for 50 to
60 minutes or until wooden pick inserted in center comes out
clean. Cool 15 minutes. Remove from pan. Cool completely.
In small bowl, combine glaze ingredients, adding enough orange
juice for desired consistency. Blend well. Drizzle glaze over
top of loaf. Garnish as desired. Allow glaze to set before wrapping
tightly. Store in refrigerator.
Makes 16 slices.
