Orange Cream Cheese Bread
8 ounces cream cheese, softened
1/2 cup shortening
1 2/3 cups granulated sugar
2 eggs
2 1/4 cups flour
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
1/2 cup chopped walnuts
2 tablespoons grated orange peel
1/2 teaspoon orange extract
2/3 cup orange juice
Combine cream cheese and shortening, creaming well. Gradually
add sugar, beating until light and fluffy. Add eggs, beating
well after each addition.
Combine flour, baking powder and salt; add to creamed mixture
alternately with milk, beginning and ending with flour mixture.
Mix well after each addition.
Stir in nuts, orange peel and extract. Pour batter into two
8- or 9-inch loaf pans which have been coated with vegetable
cooking spray.
Bake at 375 degrees F for 50 to 55 minutes or until a wooden
pick inserted in center comes out clean. Let cool in pan for
10 minutes; orange pour juice over loaves. Remove to wire rack
to cool.
This bread is very moist.
